Eggplant parmigiana is one of the most celebrated and delicious dishes of my homeland.
It is made with sliced&fried eggplant, vine-ripened tomatoes, mozzarella, eggs, breadcrumbs, and plenty of time to prep.

While you can find it anywhere in Italy, this dish is originally from Sicily.
Most people mistakenly believe that the word 'Parmigiana' is referred to Parmigiano cheese. In reality, the dish owes its name the Sicilian dialectal word "parmiciana", which refers to the slats of wood of a shutter, which overlap in the same manner as the slices of eggplant in the dish.

I make Parmigiana following my old Sicilian aunt's recipe, who made me swear
to never share it with anybody! I hope you like it as much as I do.
